I am trying to have a normal weekend day today and wanted to make pancakes, but have no pancake mix and don't want to go to the grocery store. Graham has come to expect pancakes on Sunday and is not happy. Going to get really busy in the next week getting ready to leave for Nashville. Will try to keep posting.
Recipe for great pancakes. 1/2 c flour, 1 Tbsp each of baking powder and sugar, 1/4 tsp of salt. Mix well add a mix of 1 egg, 1 Tbsp oil, and milk to make the whole liquid amt up to 6 oz. Pour liquid into dry mixture mix just until mixed and spoon by 1/4 c onto hot buttered griddle turn when bubbles appear on top of pancake. Done!
